Comté Deep Dive CLASS
Comté’s history goes back to the Roman Salt Roads and Victor Hugo. It is the most consumed PDO cheese in all of France and it pioneered a unique cooperative system that is alive and well today. It was the first cheese we imported at Essex, the inspiration for our company. Let us share its history, its rules of production and the art of Marcel Petite’s affinage and Essex selection.

GOUDA DEEP DIVE CLASS
Gouda started in The Netherlands as farm cheese traded in a single village. Today it’s a global phenomenon.
