Since 1855, generations of the Cravero family have been overseeing the “staggionatura” (cheese maturing) of the highest quality D.O.P Parmigiano-Reggiano. The Cravero family maintains cheese aging facilities both in Emilia Romagna and in the now famous town of Bra, home of Slow Food, where the family business has been headquartered for centuries.
Giorgio Cravero’s passion and skill in selecting the finest wheels from the tens of thousands produced has been learned from his father, his grandfather, and the two generations before him. With the cheeses they select the family name is literally on the line. Only after repeated deliberation, inspection, tasting and evaluation are these cheeses offered for sale. The wheels we select for Essex Cheese Co. come exclusively from the Latteria Della Croce Di Benedello.
